Don't know who originally came up with this idea, but it's come up several times on the San Andreas board. So, I thought I'd bring it here! Basically, you say what happens at wanted level (whatever). I'll start:
7 stars: Hunters will chase you, firing their machine guns. The Army will now only use tanks against you.
8 stars: Hunters now fire rockets at you. Army sets up lots of roadblocks with their tanks.
9 stars: Hydras join the chase shooting missiles at you. There will now be someone on each tank shooting at you with an M60.
10 stars: Total chaos begins! A constant stream of Hydras and Hunters will now shoot tons of unguided missiles at you, tanks get superturbos and are as fast as Turismos, 2 gunners on each tank shooting with miniguns, Army personnel now have the M16 from GTA3.

11 stars: The Army calls Chuck Norris. Chuck Norris teleports himself to where you are, and roundhouse kicks you/your car/your tank/your plane, instantly exploding it.

13 stars: Vamp chases after you, trying to convert you to bisexuality.

14 stars: random cars start raining from the sky.
15 stars: OG Loc spawns next to you and follows you everywhere you go while rapping. You can't kill him and the mute button on your TV remote is conveniently broken.

17 stars: The driverless Green Sabre chases you, trying to turn you into fender meat. You can't destroy it and if it flips over or falls into the water, it resets itself near you.
18 stars: The Green Sabre now has machine guns mounted on the front and will shoot at you.
19 stars: Your character says "Oh shit!" for no apparent reason.
20 stars: Tommy Vercetti now chases you in Diaz's everything-proof Admiral. He is armed with an M60 and if you waste him, he respawns at the nearest hospital and will come find you again.

23: V-Speck Thug chases after you in his thugalicious drag beast.
24: Kojima sends every character in MGS4 after you, but they come at you butt first.
25: Online mode turns on by itself, sending you an endless supply of tweenaged n00btards with mics.

LOL, wow, and just when I thought this topic was left for dead!
26: DRZ chases you in his uber Sivik Tipe ARRRRR with teh hella kool differential while shouting "'Murican cars SUK!!1!11" A well placed RPG will shut him up, or if you run away, his Sivik explodes if it goes faster than 11.249 MPH.
27: DRZ's Sivik can now go 11.271 MPH before exploding.
28: Top speed is now 11.594 MPH! OMG, you better run like a bat out of hell now!
29: Arnold Schwarzenegger now chases you on foot. If he catches you, he will punch your face in.
30: Arnold sees DRZ still chasing you in his Sivik and proceeds to crash into it head-on with his Tesla Roadster shouting "Hasta la vista, baby!"
31: Arnold picks up a random house and tries to throw it on your head.
32: DRZ and Thug now chase you in some Civic-Sentra hybrid. It can do the quarter mile in 14.75 seconds, OMFG!
33: Arnold smashes the Sentric (Sentra + Civic) with his fists. DRZ and Thug shit themselves. You die laughing.
